Baked Salmon (mom's recipe)

 500 degrees

In a Pyrex, add two teaspoons olive oil two teaspoons butter, let melt in oven
Add salmon- skin side up, 5 mins, flip, 4 mins

Roasted Broccoli

 

Ingredients

  • 1 bunch broccoli (about 1 1/2 pounds), cut into florets, stems peeled and sliced or diced
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, sliced
  • Kosher salt and freshly ground pepper

Directions

  1. Preheat oven to 450 degrees F.
  2. Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet. Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes.
  3. Serve warm.

Banana Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed
  • 2 shakes of cinnamon
  • 1/2 teaspoon pure vanilla extract

  • Instructions
    1. Combine flour, white sugar, baking powder, cinnamon and salt. In a separate bowl, mix together egg, milk, vegetable oil, vanilla and bananas.
    2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
    3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
     **I used the griddle at 325 degrees to be perfect- too low they don't caramelize deliciously, too high they burn a little and cook too quick
